Cheese Fondue Recipe


History of National Cheese Fondue Day Fondue has been around for centuries, but the original cheese fondue recipe was only published in 1875.



Following other comments I used 3 tbsp cornstarch instead of flour and left out the butter, and I grated the cheeses in my food processor and mixed the cornstarch in with them before adding to the wine Sauvignon Blanc.





I went to high school in Switzerland and wouldn't dream of putting anything into my cheese fondue other than day-old bread.





It features a few small holes, or "eyes", characteristic of Swiss cheese, which are formed by gas bubbles released by the bacteria that are used in making the cheese.





That in mind, I used a Sauvignon Blanc and substituted Swiss for the Emmentaler the store didn't have any.





I chose this fondue because it was the only one that seemed to have more than one cheese, and in my opinion - the more cheese, the better! Chardonay is bad Sauvignon is good.

    Put the chopped or grated cheese into the fondue pot with the wine and heat gently, stirring frequently, until boiling on the hob, by which time the cheese should have melted. Turn the pot down to a simmer. Slake the cornflour with the Kirsch in a small bowl, and add to the fondue pot along with the garlic clove.
